Although Birkbeck is not highly ranked in economics, it offers a strong and respected track in quantitative finance. Among the faculty there are at least two professors who publish a lot in top journals. Moreover, Birkbeck is also involved in a phd program in mathematical finance, called london graduate school in mathematical finance, jointly organized with LSE, King's College and Imperial College. If you are interested in commodities there is also a research center at Birkbeck, which offers training and dedicated seminars. Moreover, location and the networking opportunities at Birkbeck are better than at Tilburg.
To conclude, despite the fact that Tilburg has a stronger reputational advantage, I would pick Birkbeck over Tilburg for quantitative finance, especially if you plan to apply for PhD in Europe or work in the financial industry.
