    Arj,

    Is not it ans C.

the stem says that each of which was either red or black and as per opt2, after the exchange ,bowl Y contained 1 jelly bean of each color . So if y as 1-r and 1 B. X should have 1R and 1 B. Am I right?

The stem only says that a jelly bean can be either red or black (no other colours). This does not mean that there has to be equal representation I reckon.
    I could be wrong though.

If X=The GRE Big Book and Y=rb then after exchange we can have either X=rb and Y=The GRE Big Book Princeton Review X=The GRE Big Book and Y=rb. Based on stmt(2) the later is true. But if X=The GRE Big Book and Y=rr then after the exchange Y=X=rb. Therefore, two solutions are possible for the exchange.

Agree with Official Guide, answer is (e)
