Should I apply for Spring or Fall admissions? also rate my chances please

I'm expected to graduate this December with BS in Civil Engineering from California State University Fresno
GPA : 3.71+
GRE1 : Q790 V390
GRE2 : Q740 V550
decent rec letters from professors.
Only work experiences are 3 years enlistment with US Air Force and 2 months internship with local structural engineering firm.

Below are the schools that matches my interest and are accepting students for spring and fall semester.

UC Irvine
Cal Poly - SLO
Texas at Austin
Virginia Tech
Cornell

Here's another list of schools that ONLY admits students for Fall semester, that I REALLY want to get into

UC Berkeley
Stanford
MIT
Cal Tech

Question, should I apply to first list of schools for spring semester, get accepted and attend? or do my profile stand a chance of getting into one of the dream schools that I should apply to all schools for Fall semester?
