Really sorry for this accident. If I were you, I'll retake the GMAT, 680 is fine, but the quantity might be a little low. I know that in many econ program you are allowed to update your GRE and IBT score form time to time beofre the profile is under review, I do not know the programs in your application, maybe you can ask them via email.
