1) Based on your profile, the only classes that could give you a boost would (maybe) be grad-level econ courses. Your profile is already quite strong, so you don't really need to take additional courses.
2) The range of schools looks good for your profile. You might want to add in a reach school (maybe UC-Berkeley since you seem to be interested in California schools) if you have the money and time for the application.
