is it because ..."those" is plural and "that" is singular....? or there is some other reason..?

"some people believe that the benefits of the a healthy diet outweigh that of regular exercise " ..this sentence is wrong ..and it becomes correct by replacing " that of regular exercise" with " those of regular exercise" but I dont understand what is the reason behind this.... is it because "those " is plural ..and "that" singular ... Hi , I understand that the "fewer" is used when we are referring to countable nouns and "less" is used we are refering to " non-countable" nouns.In that case which of the following sentences is correct : " there are fewer than 1000 species of frogs left in Amazon forest " "The number of species of frogs left in amazon forest is 1000" I read somewhere that "less " can be used for numbers like percents, fractions ,and other numbers ..I was just wondering what is that "other numbers" please can somebody help on this...
